- 2 cups cooked macaroni
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 4 large flour tortillas
- 2 tablespoons butter
- Salt and pepper to taste
- Optional: cooked bacon, sautéed onions, or diced jalapeños
Instructions
- In a pot, combine cooked macaroni, cheddar, and mozzarella over medium heat, stirring until melted and creamy.
- Spread a generous portion of the mac and cheese mixture onto one tortilla.
- Place another tortilla on top and press gently.
- Heat a skillet over medium heat and melt a tablespoon of butter.
- Cook the quesadilla in the skillet for about 3-4 minutes on each side, until crispy and golden brown.
- Remove from skillet, cut into wedges, and serve with dipping sauces and garnishes.
Notes
Feel free to add extra veggies or meats for a satisfying twist! For the best texture, don’t overfill the quesadillas.
