Description

A delicious fusion of creamy mac and cheese and crispy quesadillas, perfect for a comforting meal.


Ingredients

  • 2 cups cooked macaroni
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 4 large flour tortillas
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: cooked bacon, sautéed onions, or diced jalapeños

Instructions

  1. In a pot, combine cooked macaroni, cheddar, and mozzarella over medium heat, stirring until melted and creamy.
  2. Spread a generous portion of the mac and cheese mixture onto one tortilla.
  3. Place another tortilla on top and press gently.
  4. Heat a skillet over medium heat and melt a tablespoon of butter.
  5. Cook the quesadilla in the skillet for about 3-4 minutes on each side, until crispy and golden brown.
  6. Remove from skillet, cut into wedges, and serve with dipping sauces and garnishes.

Notes

Feel free to add extra veggies or meats for a satisfying twist! For the best texture, don’t overfill the quesadillas.
