- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 tablespoons fresh rosemary, chopped
- 4 medium potatoes, cut into even-sized pieces

Instructions
- In a bowl, combine olive oil, lemon juice, and rosemary to create a marinade.
- Marinate the chicken in the mixture for at least 30 minutes.
- Preheat the oven to 400°F (200°C).
- Toss the potatoes in the remaining marinade and season with salt and pepper.
- On a baking sheet, arrange the marinated chicken and potatoes in a single layer.
- Roast in the oven for 35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes before serving.
