Ingredients

- 1 cup pearl couscous
- 2 tablespoons olive oil
- 1 lemon (zested and juiced)
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- Salt to taste
- Pepper to taste
- Optional: chopped veggies, chickpeas, or feta cheese
Instructions
- Toast couscous in olive oil in a saucepan over medium heat until golden brown.
- Add water (or broth) and bring to a boil. Cook according to package instructions until tender.
- Drain and let cool slightly.
- In a large bowl, combine couscous with lemon juice, zest, herbs, and season with salt and pepper.
- Add any optional ingredients and mix well.
- Serve chilled or at room temperature, and enjoy!
Notes
Taste as you go, especially when adding salt and lemon. For extra freshness, add a splash of lemon juice before serving.
