Ingredients

- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 3 cups chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/2 cup white wine (optional)
- 1 lemon, juiced and zested
- 2 tablespoons butter
- 1/3 cup grated Parmesan cheese (optional)
- Salt and pepper to taste
- Fresh herbs (parsley, dill or tarragon) for garnish
Instructions
- Season the chicken with salt and pepper, then sear in a large skillet over medium-high heat until golden, about 3-4 minutes per side. Remove and set aside.
- In the same pan, sauté onion and garlic until fragrant.
- Add orzo and toast briefly, about 1-2 minutes.
- Deglaze with a splash of white wine or broth.
- Pour in hot chicken broth and add the chicken back to the pan.
- Simmer until the orzo is al dente, about 8-10 minutes.
- Finish with lemon juice, zest, butter, and Parmesan if desired.
- Serve hot, garnished with fresh herbs.
Notes
For a creamier finish, stir in extra butter and Parmesan off the heat. Adjust the flavor with additional lemon juice or zest if needed.
