Description

A quick and flavorful stir-fry featuring lemon-infused chicken and fresh asparagus, ready in just 20 minutes.


Ingredients

Scale
  • 1 lb (450 g) boneless skinless chicken breast
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb (450 g) asparagus, trimmed
  • 3 cloves garlic, minced
  • 1 tsp lemon zest
  • 2 tbsp neutral oil
  • 2 tbsp soy sauce (or tamari)
  • 1 tbsp honey
  • 2 tbsp fresh lemon juice
  • 1 tsp cornstarch
  • 1 tbsp water

Instructions

  1. Slice the chicken into thin strips and season with salt and pepper.
  2. Trim asparagus into 1–2 inch pieces and mince garlic.
  3. Heat oil in a skillet or wok over medium-high heat.
  4. Sear the chicken in batches for 2–3 minutes per side until cooked, then remove and rest.
  5. Sauté asparagus for 2–3 minutes until bright; add garlic and cook for an additional 30 seconds.
  6. Return chicken to the pan, stir in sauce ingredients and cook until glossy.
  7. Finish with lemon juice and serve over rice or noodles.

Notes

Serve over steamed rice or toss with noodles for a hearty meal. Garnish with sesame seeds and lemon wedges.
