- 2 medium zucchini (about 400g), grated
- 1 cup all-purpose flour
- 2 large eggs
- 3 green onions, finely chopped
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- Salt and pepper to taste
- Vegetable oil for frying (about ½ cup)
Instructions
- Grate the zucchini and squeeze out the excess moisture using a clean kitchen towel.
- In a mixing bowl, combine the drained zucchini with flour, eggs, green onions, garlic, soy sauce, salt, and pepper until well mixed.
- Heat vegetable oil in a non-stick skillet over medium heat.
- Drop spoonfuls of batter into the hot oil; flatten slightly for even cooking. Fry for about 3 minutes on each side until golden brown.
- Drain on paper towels to remove excess oil before serving.
Notes
For added flavor, sprinkle some sesame seeds or chopped herbs on top before serving. To make a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
