Delicious and crispy Korean Zucchini Fritters made with fresh zucchini, perfect as a healthy snack or side dish.

Ingredients

  • 2 medium zucchini (about 400g), grated
  • 1 cup all-purpose flour
  • 2 large eggs
  • 3 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • Salt and pepper to taste
  • Vegetable oil for frying (about ½ cup)

Instructions

  1. Grate the zucchini and squeeze out the excess moisture using a clean kitchen towel.
  2. In a mixing bowl, combine the drained zucchini with flour, eggs, green onions, garlic, soy sauce, salt, and pepper until well mixed.
  3. Heat vegetable oil in a non-stick skillet over medium heat.
  4. Drop spoonfuls of batter into the hot oil; flatten slightly for even cooking. Fry for about 3 minutes on each side until golden brown.
  5. Drain on paper towels to remove excess oil before serving.

Notes

For added flavor, sprinkle some sesame seeds or chopped herbs on top before serving. To make a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
