  • 1 cup all-purpose flour
  • 2 large eggs
  • 3 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • Salt and pepper to taste
  • Vegetable oil for frying (about ½ cup)

Instructions

  1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  2. In a mixing bowl, combine the drained zucchini with flour, eggs, green onions, garlic, soy sauce, salt, and pepper until well mixed.
  3. Heat vegetable oil in a non-stick skillet over medium heat.
  4. Drop spoonfuls of batter into the hot oil; flatten slightly for even cooking. Fry for about 3 minutes on each side until golden brown.
  5. Drain on paper towels to remove excess oil before serving.

Notes

For extra crispiness, ensure to squeeze out as much moisture from the zucchini as possible. Adjust seasoning and add red pepper flakes for a spicy kick.
