- 1/2 to 3/4 cup fresh key lime juice (about 6–8 key limes)
- 14 ounces sweetened condensed milk
- 1 tablespoon lime zest
- Pinch of salt
- 6 cups snap rice cereal or crushed graham crackers
- 1/2 cup unsalted butter (melted)
- Grated lime zest for topping (optional)
- White chocolate (optional, for drizzling)
Instructions
- Zest 2–3 key limes and juice 1/2 to 3/4 cup fresh key lime juice.
- In a bowl, whisk together the lime juice, sweetened condensed milk, lime zest, and a pinch of salt until smooth.
- In another bowl, combine the crunchy base (cereal or crushed crackers) with melted butter.
- Pour the lime-condensed milk mixture over the crunchy base and gently fold to coat without over-mushing.
- Press the mixture into a lined 9×13-inch pan.
- Chill for 30–60 minutes until firm.
- Optionally top with grated lime zest or white chocolate drizzle before serving.
Notes
Store in an airtight container in the fridge for up to 4–5 days. For longer storage, wrap individual bars and freeze for up to 2 months.
