Description

Delicious low-carb Reuben flavors in crispy roll-ups, perfect for snacking or quick meals.


Ingredients

  • 8 low-carb tortillas or 8 small fathead dough rounds
  • 1 tablespoon keto Russian dressing (2 tbsp mayonnaise + 1 tsp sugar-free ketchup + 1 tsp Dijon mustard + 1/2 tsp Worcestershire sauce)
  • 8 slices of Swiss cheese (11.5 oz each)
  • 16 oz thinly sliced corned beef
  • 4 tablespoons well-drained sauerkraut
  • 1 beaten egg (for brushing)
  • 1 cup crushed pork rinds (optional, for extra crunch)
  • 1 tablespoon butter (for skillet method)

Instructions

  1. Start by laying out each tortilla or fathead dough round.
  2. Spread 1 tablespoon of keto Russian dressing on each.
  3. Add a slice of Swiss cheese, followed by corned beef and sauerkraut.
  4. Tight-roll each tortilla, brush with beaten egg, and optional pork rinds.
  5. Air fry at 375°F (190°C) for 6–8 minutes, flipping once until golden.
  6. Alternatively, pan-fry over medium heat with butter for 3–4 minutes per side.

Notes

Serve with warmed keto Russian dressing or dill mustard for dipping. Great for gatherings!
