- 1 tablespoon keto Russian dressing (2 tbsp mayonnaise + 1 tsp sugar-free ketchup + 1 tsp Dijon mustard + 1/2 tsp Worcestershire sauce)
- 8 slices of Swiss cheese (1–1.5 oz each)
- 16 oz thinly sliced corned beef
- 4 tablespoons well-drained sauerkraut
- 1 beaten egg (for brushing)
- 1 cup crushed pork rinds (optional, for extra crunch)
- 1 tablespoon butter (for skillet method)
Instructions
- Start by laying out each tortilla or fathead dough round.
- Spread 1 tablespoon of keto Russian dressing on each.
- Add a slice of Swiss cheese, followed by corned beef and sauerkraut.
- Tight-roll each tortilla, brush with beaten egg, and optional pork rinds.
- Air fry at 375°F (190°C) for 6–8 minutes, flipping once until golden.
- Alternatively, pan-fry over medium heat with butter for 3–4 minutes per side.
Notes
Serve with warmed keto Russian dressing or dill mustard for dipping. Great for gatherings!
