Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 3 large eggs (room temperature)
  • 1 cup whole milk
  • ½ cup unsalted butter (melted)
  • Whipped cream, to taste
  • Fruit preserves (your choice), to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round baking pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs until frothy. Mix in milk and melted butter until combined.
  4. Gradually combine the wet mixture with the dry ingredients until just blended.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes until golden brown.
  6. Allow the cakes to cool before layering one with fruit preserves and whipped cream, then add the second layer on top.

Notes

Make sure your eggs are at room temperature for better mixing. Keep the batter light and fluffy by not overmixing. Experiment with different fruit preserves for a variety of flavors.
