Ingredients

- 2 tablespoons cold water
- 1 tablespoon powdered gelatin
- 1 cup fruit purée or low-fat Greek yogurt
- 1 tablespoon honey or sugar substitute
- 2/3 cup Greek yogurt (for filling)
- Zest and cinnamon (to taste)
- Parchment paper (for lining)
- Nonstick spray (for greasing)
Instructions
- Start by blooming powdered gelatin in cold water for 5 minutes.
- Warm the fruit purée or yogurt with honey until about 120°F.
- Whisk in the bloomed gelatin until dissolved.
- Pour the mixture into a parchment-lined tray to a thickness of 1/4–1/3 inch.
- Chill until firm, then spread a layer of Greek yogurt filling.
- Roll using the parchment to guide it.
- Chill again for 30 minutes to set the seam, then slice.
Notes
Use parchment and spray for easier release. Ensure the mixture is fully chilled to prevent cracking.
