- 12 large button mushrooms
- 4 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 2 fresh jalapeños, diced
- ½ cup crispy bacon bits
- 2 green onions, chopped
- ½ cup breadcrumbs (plain or seasoned)
Instructions
- Preheat your oven to 375°F (190°C).
- Remove the stems from the mushrooms and hollow out each cap slightly.
- In a bowl, mix cream cheese, cheddar cheese, jalapeños, bacon bits, and green onions until well combined.
- Generously stuff each mushroom cap with the mixture.
- Top each stuffed mushroom with breadcrumbs and place them on a lined baking sheet.
- Bake for 20-25 minutes or until golden brown and bubbly.
Notes
These mushrooms can be prepared a day ahead and stored in the fridge. For a vegetarian option, skip the bacon or use quinoa or chopped nuts.
