- 1 cup Milk (substitute with plant-based milk for dairy-free)
- 1 large Egg (for vegan option, use flax egg or applesauce)
- 2 tablespoons Sugar
- 1 tablespoon Food Coloring (or pumpkin purée for color)
- Optional Add-ins: cinnamon or pumpkin pie spice, fruit (berries or banana slices), chocolate chips, spreads (nut butters or whipped cream)
Instructions
- In a large bowl, mix the flour, baking powder, and salt together.
- In another bowl, whisk the milk, eggs, sugar, and food coloring until well blended.
- Pour the wet mixture into the dry mixture and stir until just combined. Do not over mix; some lumps are okay.
- Heat a skillet or griddle over medium heat and lightly grease it.
- Pour a small amount of batter onto the skillet to create a circular pancake.
- Once bubbles form on the surface, flip the pancake to cook the other side until golden brown.
- Use chocolate chips and fruit to create jack-o’-lantern faces.
- Repeat with the remaining batter.
Notes
Let the batter rest before cooking for fluffier pancakes. Store leftovers in an airtight container for up to three days or freeze them.
