Ingredients

  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Milk (substitute with plant-based milk for dairy-free)
  • 1 large Egg (for vegan option, use flax egg or applesauce)
  • 2 tablespoons Sugar
  • 1 tablespoon Food Coloring (or pumpkin purée for color)
  • Optional Add-ins: cinnamon or pumpkin pie spice, fruit (berries or banana slices), chocolate chips, spreads (nut butters or whipped cream)

Instructions

  1. In a large bowl, mix the flour, baking powder, and salt together.
  2. In another bowl, whisk the milk, eggs, sugar, and food coloring until well blended.
  3. Pour the wet mixture into the dry mixture and stir until just combined. Do not over mix; some lumps are okay.
  4. Heat a skillet or griddle over medium heat and lightly grease it.
  5. Pour a small amount of batter onto the skillet to create a circular pancake.
  6. Once bubbles form on the surface, flip the pancake to cook the other side until golden brown.
  7. Use chocolate chips and fruit to create jack-o’-lantern faces.
  8. Repeat with the remaining batter.

Notes

Let the batter rest before cooking for fluffier pancakes. Store leftovers in an airtight container for up to three days or freeze them.
