- 1 tablespoon olive oil
- 1 diced onion
- 3 minced garlic cloves
- 28 oz can crushed tomatoes
- 4 cups low-sodium chicken broth

- 8 oz small pasta (ditalini, small shells, or orzo)
- 2 cups baby spinach or chopped basil
- Grated Parmesan for serving (optional)
- Chopped parsley for garnish (optional)
Instructions
- Start by removing sausage from casings (if using links) and brown Italian sausage in olive oil over medium-high heat in a Dutch oven.
- Add the diced onion and minced garlic; sauté for 2–3 minutes until translucent.
- Stir in crushed tomatoes, chicken broth, dried oregano, salt, and pepper.
- Bring to a simmer and then add the small pasta.
- Simmer for 8–10 minutes until pasta is al dente; finish with spinach or basil.
- Garnish with grated Parmesan and parsley if desired.
Notes
For a thicker soup, stir a mixture of cornstarch and water; to thin, add extra broth. Adjust seasoning with vinegar or lemon for brightness.
