Description
A refreshing pasta salad that brings the flavors of a classic hoagie together, perfect for picnics and potlucks.
Ingredients

- 12–16 oz pasta (rotini or penne)
- 8 oz deli salami, diced
- 8 oz deli ham, diced
- 6 oz provolone cheese, cubed
- 1 cup bell peppers, chopped
- 1 cup cherry tomatoes, halved
- 1/3 cup olive oil
- 3 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp dried oregano
- 1/2 tsp sugar
- Salt and pepper to taste
Instructions
- Boil the pasta in a large pot of well-salted water until al dente (about 9–11 minutes).
- While the pasta cooks, chop the deli meats and cheese, and prepare the vegetables.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, sugar, and season with salt and pepper.
- Once the pasta is cooked, drain and rinse it under cold water to halt cooking.
- In a large bowl, combine the pasta, diced meats, cheese, and vegetables. Toss with most of the dressing.
- Chill the salad in the refrigerator for 30–60 minutes to meld flavors.
- Before serving, adjust seasoning and add reserved dressing if needed.
Notes
For added crunch, consider topping with toasted pine nuts or sunflower seeds before serving.
