Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • Fresh basil and parsley, for garnish
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Brown the Italian sausage in a large pot over medium heat until fully cooked.
  2. Remove sausage and set aside, then sauté onions, garlic, carrots, and celery in the same pot until softened.
  3. Return the sausage to the pot, then add chicken broth and bring to a simmer.
  4. Stir in heavy cream and spinach, allowing to simmer for a few more minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh herbs and Parmesan cheese.

Notes

For a lighter version, substitute coconut milk for the heavy cream. Adjust the cream to taste.
