- 1 lb Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach, chopped
- Fresh basil and parsley, for garnish
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
Instructions
- Brown the Italian sausage in a large pot over medium heat until fully cooked.
- Remove sausage and set aside, then sauté onions, garlic, carrots, and celery in the same pot until softened.
- Return the sausage to the pot, then add chicken broth and bring to a simmer.
- Stir in heavy cream and spinach, allowing to simmer for a few more minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs and Parmesan cheese.
Notes
For a lighter version, substitute coconut milk for the heavy cream. Adjust the cream to taste.
