- 1 tsp almond extract

- 2 cups (250 g) all-purpose flour
- 1 cup (100 g) almond meal
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup chopped dried cherries
- 1/2 cup chopped toasted almonds
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the butter and sugar together until light and fluffy.
- Add the egg, almond extract, and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, almond meal, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture, then stir in the chopped cherries and toasted almonds.
- Drop rounded tablespoons of dough onto the prepared baking sheet.
- Bake for 12-15 minutes, until the edges are light golden and centers are slightly soft.
- Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
