A healthy and flavorful chicken meatloaf perfect for weeknight dinners and family gatherings.

Ingredients

  • 1 lb (450g) ground chicken
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup (50g) breadcrumbs
  • ¼ cup (60ml) milk
  • 2 tablespoons barbecue sauce, plus more for topping
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease or line a loaf pan with parchment paper.
  2. Optionally, cook the chopped onion and garlic in a pan until softened for extra flavor.
  3. In a large bowl, combine the ground chicken, onion, garlic, egg, breadcrumbs, milk, barbecue sauce, Worcestershire sauce, paprika, salt, and pepper. Mix gently without overworking the mixture.
  4. Form the mixture into a loaf shape in the prepared pan. Spread some extra barbecue sauce over the top.
  5. Bake in the preheated oven for 45–55 minutes, until the internal temperature reaches 165°F (74°C).
  6. Let the meatloaf rest for 10 minutes before slicing. Garnish with parsley if desired.

Notes

Add grated veggies like carrots or zucchini for extra moisture. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
