Instructions
- Preheat oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing gently after each addition.
- Pour the cream cheese mixture over the crust and bake for 30 minutes.
- Allow the cheesecake to cool, then chill in the refrigerator for at least 4 hours or overnight.
- Mix sliced strawberries with sugar and let them sit.
- Top the chilled cheesecake with the strawberry mixture and garnish with mint leaves before serving.
