Ingredients

  • 2 cups fresh strawberries, hulled and sliced

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing gently after each addition.
  5. Pour the cream cheese mixture over the crust and bake for 30 minutes.
  6. Allow the cheesecake to cool, then chill in the refrigerator for at least 4 hours or overnight.
  7. Mix sliced strawberries with sugar and let them sit.
  8. Top the chilled cheesecake with the strawberry mixture and garnish with mint leaves before serving.
