- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda

- 3 cups rolled oats
- 2 cups butterscotch chips
Instructions
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing well until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the rolled oats and butterscotch chips.
- Scoop dough onto a baking sheet lined with parchment paper.
- Bake in a preheated oven at 350°F (175°C) for 10-12 minutes until the edges are golden.
- Allow to cool slightly on the baking sheet before transferring to wire racks.
Notes
For best results, use room temperature ingredients and chill the dough before baking. Store cookies in an airtight container for up to a week.
