Ingredients
Scale
- 10 corn tortillas
- 2 cups vegetable oil
- 2 cups cheddar cheese
- 1 cup jalapeño peppers
- 1 cup salsa
- 1 cup chile con queso
Instructions
- Cut corn tortillas into triangles or preferred chip shape. Heat vegetable oil in a deep pan to medium-high heat. Fry tortilla pieces in batches until golden and crispy, about 2-3 minutes. Drain on paper towels.
- Arrange the fried tortilla chips on an oven-safe plate or baking tray. Evenly sprinkle grated cheddar cheese over the chips.
- Place the assembled nachos under a salamander broiler or in a hot oven until the cheese is thoroughly melted, about 2-5 minutes. Top with sliced jalapeños while the cheese is hot.
- Serve immediately with salsa or chile con queso on the side.
Notes
For extra crunch, fry the tortilla chips until very golden. Consider using a mix of cheeses for enhanced flavor and avoid overloading nachos with toppings to prevent sogginess.
