- 1 ½ cups shortbread or graham cracker crumbs
- ½ cup unsalted butter, melted
- 8 oz white chocolate, chopped
- 8 oz cream cheese, room temperature
- ½ cup heavy cream
- 1 tsp vanilla extract
- 1 tbsp lemon juice (optional)
- 2 cups fresh cranberries (or dried, if necessary)
- Simple syrup (for sugared cranberries)
- Additional sugar for rolling cranberries
Instructions
- In a bowl, combine cookie crumbs and melted butter. Press mixture into the bottom of a tart pan and chill.
- Melt the white chocolate gently using a microwave or stovetop.
- In another bowl, beat cream cheese with the heavy cream, vanilla, and lemon juice until smooth. Add melted white chocolate and blend until combined.
- Pour filling into the chilled crust and refrigerate for at least 2 hours.
- For sugared cranberries, dip fresh cranberries in simple syrup, roll in sugar, and let dry on parchment paper.
- Top the chilled tart with sugared cranberries before serving and drizzle with extra white chocolate if desired.
