Instructions
- Preheat the oven to 350°F (175°C).
- Boil sweet potatoes until tender, then mash until smooth.
- Combine mashed sweet potatoes, coconut milk, vanilla extract, sugar, spices, and salt in a mixing bowl; mix until creamy.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 45 minutes or until the edges are golden brown and the center jiggles slightly.
Notes
