A warm and comforting dish featuring sweet potatoes and kale in a creamy sauce, perfect for gatherings.

Ingredients

Scale
  • 1 bunch Kale (Can be substituted with spinach)
  • 2 pounds Sweet Potatoes, peeled and sliced thinly
  • 1 cup Parmesan Cheese (Can use Gruyere for distinct flavor)
  • 1 cup Heavy Whipping Cream (Whole milk can be substituted)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/4 teaspoon Ground Nutmeg
  • 3 tablespoons Salted Butter (Extra to grease baking dish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a baking dish with a bit of salted butter.
  3. Rinse the kale and chop it coarsely.
  4. In a large bowl, mix the heavy cream, salt, black pepper, and ground nutmeg.
  5. Layer half of the sweet potato slices in the bottom of the greased baking dish.
  6. Spread half of the kale over the potatoes, followed by half of the Parmesan cheese.
  7. Pour a portion of the cream mixture over this layer.
  8. Repeat the layers with the remaining sweet potatoes, kale, and cheese. Finish by pouring the rest of the cream over the top.
  9. Dot the top with the remaining butter.
  10. Cover the dish with foil and bake for 30 minutes.
  11. Remove the foil and bake for an additional 30 minutes, or until the sweet potatoes are tender and the top is golden brown.
  12. Let it cool for a few minutes before serving.

Notes

Feel free to mix in other vegetables or use different cheeses for customization.
