- 2 cups all-purpose flour
- 2 tbsp cocoa powder
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup neutral oil
- 1 tsp vanilla extract
- 2 tbsp red food coloring
- 8 oz cream cheese
- 1/3 cup sugar for filling
- 1 egg for filling
Instructions
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with parchment liners.
- In a medium bowl, combine all dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the eggs, buttermilk, oil, vanilla, and red food coloring.
- Fold the wet ingredients into the dry until just combined, being careful not to overmix.
- For the cream cheese filling, beat the cream cheese, sugar, and egg until smooth, then chill for 10 minutes.
- Spoon or pipe about 1 tbsp of cream cheese filling into each muffin cup.
- Fill the cups with the batter, topping with a little extra cream cheese.
- Bake for 18–22 minutes, until a toothpick comes out with moist crumbs.
- Cool for 10 minutes in the pan, then transfer to a rack to cool completely.
Notes
Serve warm with powdered sugar and fresh berries. These muffins freeze well and can be reheated for quick snacks.
