Ingredients
- Beef fillets (filet mignon or tenderloin)
- Puff pastry
- Finely chopped mushrooms
- Garlic
- Butter
- Fresh herbs (thyme, parsley)

Instructions
- Sear the seasoned beef fillets in a hot pan until beautifully browned.
- Prepare the mushroom duxelles by sautéing finely chopped mushrooms with garlic and herbs in butter until cooked down.
- Let the mushroom mixture cool slightly.
- Wrap the beef and cooled duxelles in puff pastry, crimping the edges to seal them.
- Brush with egg wash for a golden finish and chill for 15 minutes.
- Bake in a preheated oven at 400°F (200°C) for 25-30 minutes, until golden brown.
