- 4–5 medium Sweet Potatoes
- ½ cup Unsalted Butter, room temperature
- 1 cup Brown Sugar
- ¼ cup Milk
- ½ cup Chopped Pecans
- 1 cup Mini Marshmallows
- 1 teaspoon Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C).
- Bake the sweet potatoes until tender, about 45-60 minutes. Let them cool, then peel and mash.
- In a mixing bowl, combine mashed sweet potatoes, butter, brown sugar, milk, and vanilla extract.
- Transfer the mixture to a baking dish and spread it evenly.
- In a separate bowl, mix the chopped pecans, additional butter, brown sugar, and flour to create the topping.
- Spread the pecan mixture evenly over the sweet potato mix and top it with mini marshmallows.
- Bake for 25-30 minutes or until the topping is golden and bubbly.
- Let it cool slightly before serving.
Notes
This casserole can be made ahead of time; keep the topping separate until ready to bake. Perfect side for Thanksgiving or any special occasion.
