Description

These frozen yogurt granola cups are a crunchy, creamy snack that feels indulgent yet is healthy, perfect for batch prepping lunches or snacks.


Ingredients

  • 3 tablespoons coconut oil (or unsalted butter)
  • 2 cups whole-grain granola
  • 1 tablespoon maple syrup
  • 2 cups thick Greek yogurt
  • 12 tablespoons honey
  • 1 teaspoon vanilla
  • Fresh berries or chopped nuts for topping

Instructions

  1. Start by melting the coconut oil and mixing it with the granola and maple syrup.
  2. Press about 2 tablespoons of the mixture into each muffin cup.
  3. Chill in the freezer for 10–15 minutes to set.
  4. Mix Greek yogurt with honey and vanilla; strain if necessary.
  5. Spoon or pipe the yogurt into the granola cups.
  6. Top with berries or nuts and freeze for 30–45 minutes until firm.

Notes

For a firmer texture, serve straight from the freezer or let sit at room temperature for a few minutes for a softer bite. Store in an airtight container with parchment between layers in the freezer.
