- 2 cups whole-grain granola
- 1 tablespoon maple syrup
- 2 cups thick Greek yogurt
- 1–2 tablespoons honey
- 1 teaspoon vanilla
- Fresh berries or chopped nuts for topping
Instructions
- Start by melting the coconut oil and mixing it with the granola and maple syrup.
- Press about 2 tablespoons of the mixture into each muffin cup.
- Chill in the freezer for 10–15 minutes to set.
- Mix Greek yogurt with honey and vanilla; strain if necessary.
- Spoon or pipe the yogurt into the granola cups.
- Top with berries or nuts and freeze for 30–45 minutes until firm.
Notes
For a firmer texture, serve straight from the freezer or let sit at room temperature for a few minutes for a softer bite. Store in an airtight container with parchment between layers in the freezer.
