- 1 whole free-range chicken (or bone-in thighs)
- 4 cups chicken broth
- 2 cups jasmine rice
- 2 tablespoons ginger, minced
- 4 cloves garlic, minced
- 3 scallions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon chili sauce
- Cucumber slices, for serving
- Salt, to taste
Instructions
- In a large pot, combine chicken, chicken broth, ginger, garlic, and scallions. Bring to a gentle simmer.
- Poach the chicken for about 30-40 minutes until fully cooked and tender.
- Remove the chicken and let it rest while reserving the poaching broth.
- In the same broth, add rinsed jasmine rice and cook according to package instructions.
- Slice the chicken and serve it over the rice, drizzling with soy sauce and chili sauce. Add cucumber slices on the side.
Notes
Control the poaching temperature to avoid tough chicken. Fresh herbs enhance flavor significantly.
