- 8 tablespoons (1 stick) unsalted butter
- 3/4 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder

- 2 cups sliced strawberries
- 1 tablespoon granulated sugar (for macerating strawberries)
- 1 teaspoon lemon juice
- 1 1/2–2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons simple syrup (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease two 8-inch pans, lining the bottoms with parchment.
- Cream 8 tablespoons of unsalted butter with 3/4 cup granulated sugar until pale and fluffy (3–4 minutes on medium).
- Add 2 large eggs one at a time, scraping the bowl between additions.
- Whisk together 1 1/2 cups all-purpose flour, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt; add to the butter-egg mixture alternating with 1/3 cup whole milk, beginning and ending with the dry ingredients, folding gently.
- Divide the batter between the prepared pans, smooth the tops, and bake for 22–28 minutes until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- Macerate 2 cups sliced strawberries with 1 tablespoon granulated sugar and 1 teaspoon lemon juice for 15–30 minutes.
- Whip 1 1/2–2 cups heavy cream with 1/4 cup powdered sugar and 1 teaspoon vanilla to soft peaks.
- Brush layers with 2–3 tablespoons simple syrup if desired, spread a thin layer of whipped cream, add a third of the macerated strawberries, top with the second layer, and finish with more whipped cream and decorative strawberry halves.
- Chill the assembled cake for at least 1 hour before slicing.
Notes
Use room-temperature ingredients for better mixing. Stabilize whipped cream if needed for longer display time.
