Description

Indulgent pink velvet cookies with soft centers and tangy cream cheese frosting, perfect for celebrations.


Ingredients

  • 1/2 cup (113 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp white vinegar
  • 12 tsp red or pink food coloring
  • 2 cups (240 g) all-purpose flour
  • 1½ tsp baking powder
  • 1/2 tsp fine salt
  • 1 tbsp unsweetened cocoa powder
  • 8 oz cream cheese, softened
  • 1/2 cup (113 g) butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Cream the butter and sugar until light and fluffy, about 3 minutes.
  2. Add the egg, vanilla, vinegar, and food coloring; mix until combined.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and cocoa powder.
  4. Fold the dry ingredients into the wet ingredients until just combined.
  5. Chill the dough for 30–60 minutes.
  6. Scoop 2-tablespoon portions onto a parchment-lined baking sheet.
  7. Bake at 350°F (177°C) for 10–12 minutes.
  8. Cool on the pan for 5 minutes, then transfer to a rack.
  9. For frosting, beat cream cheese and butter together, then add powdered sugar and vanilla.
  10. Pipe or spread frosting onto cooled cookies.

Notes

Dough can be frozen for up to 3 months. Use room temperature ingredients for better texture.
