- 2 tsp baking powder

- 1/2 cup melted butter

- 2 tsp ground cinnamon (for rolling)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and cinnamon.
- In another bowl, mix the eggs, milk, melted butter, and vanilla extract.
- Gently combine the wet and dry ingredients, being careful not to overmix.
- Spoon the batter into the prepared muffin tins until 2/3 full.
- Bake for 20 minutes or until golden brown and a toothpick comes out clean.
- While warm, roll the muffins in a mixture of sugar and cinnamon.
Notes
For best results, use stale bread or lightly toasted bread to absorb the custard mixture better.
