- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 small shallot, finely minced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 1/2 cups heavy cream (or 1 cup heavy cream + 1/2 cup whole milk)
- 1–2 teaspoons Cajun seasoning
- 1/4 teaspoon cayenne (optional)
- Salt, to taste
- 1/2 to 3/4 cup finely grated Parmesan cheese
- 1 teaspoon lemon juice
- Chopped parsley, for garnish
Instructions
- Melt butter with olive oil over medium heat in a heavy-bottomed sauté pan.
- Add minced shallot and garlic; cook until fragrant, about 1 minute.
- Stir in the flour and cook for 1-2 minutes.
- Slowly whisk in the heavy cream and bring to a gentle simmer (about 175-185°F).
- Stir in Cajun seasoning, cayenne, and salt to taste.
- Remove from heat and whisk in Parmesan until smooth.
- Finish with lemon juice and chopped parsley.
- Serve over cooked pasta or as a dipping sauce.
Notes
For best results, use freshly grated Parmesan and control the heat carefully to prevent separation.
