- 2 large eggs
- 1 cup (120 g) self-rising flour (or 1 cup all-purpose flour + 1 1/2 teaspoons baking powder + 1/4 teaspoon salt)
Instructions
- Blend cottage cheese with eggs until smooth in a food processor or blender.
- Stir in flour mixture.
- Scoop or pipe 6 even portions onto a parchment-lined baking sheet.
- Shape into small ovals or bagel-like rings.
- Bake at 400°F (200°C) for 12–16 minutes until edges are golden.
- Let rest 5 minutes before cutting.
Notes
For added crispiness, brush tops lightly with olive oil and broil for 30–60 seconds at the end.
