Ingredients

Instructions

  1. Infuse the cream by heating it with the vanilla bean and letting it sit for 10 minutes.
  2. Whisk together egg yolks and sugar until pale, then slowly mix in the hot cream.
  3. Strain the mixture and pour into ramekins.
  4. Bake in a water bath at 325°F for 30-40 minutes until set.
  5. Cool to room temperature, then refrigerate for at least 2 hours.
  6. Sprinkle sugar on top and caramelize using a blowtorch or broiler.
