- 2 cups heavy cream
- 1 vanilla bean (or 1 teaspoon vanilla extract)
- 5 large egg yolks
- 1/2 cup granulated sugar
- Pinch of salt
Instructions
- Infuse the cream by heating it with the vanilla bean and letting it sit for 10 minutes.
- Whisk together egg yolks and sugar until pale, then slowly mix in the hot cream.
- Strain the mixture and pour into ramekins.
- Bake in a water bath at 325°F for 30-40 minutes until set.
- Cool to room temperature, then refrigerate for at least 2 hours.
- Sprinkle sugar on top and caramelize using a blowtorch or broiler.
Notes
Caramelize the sugar just before serving for the best texture. Experiment with different sugars for unique flavors.
