- 6 egg yolks
- 2 1/2 cups heavy cream
- 1/3 cup + 4 tablespoons white sugar
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 150ºC (300°F).
- In a bowl, combine egg yolks and sugar, whisk until mixed.
- Add heavy cream and vanilla, mix well.
- Pour mixture into ramekins.
- Bake in a water bath for 45-60 minutes until custard is set.
- Chill the custard in the refrigerator for at least 2 hours, preferably overnight.
- When ready to serve, sprinkle a thin layer of sugar on top of each custard.
- Choose your method: broil for 1-2 minutes, use a heated spoon, or prepare caramel on the stovetop and pour it over the custard.
- Let sit for a few minutes until the sugar hardens before serving.
Notes
For best results, use Demerara or turbinado sugar for the topping. Ensure the custard is very chilled before caramelizing the sugar.
