Ingredients

  • 6 egg yolks
  • 2 1/2 cups heavy cream
  • 1/3 cup + 4 tablespoons white sugar
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 150ºC (300°F).
  2. In a bowl, combine egg yolks and sugar, whisk until mixed.
  3. Add heavy cream and vanilla, mix well.
  4. Pour mixture into ramekins.
  5. Bake in a water bath for 45-60 minutes until custard is set.
  6. Chill the custard in the refrigerator for at least 2 hours, preferably overnight.
  7. When ready to serve, sprinkle a thin layer of sugar on top of each custard.
  8. Choose your method: broil for 1-2 minutes, use a heated spoon, or prepare caramel on the stovetop and pour it over the custard.
  9. Let sit for a few minutes until the sugar hardens before serving.

Notes

For best results, use Demerara or turbinado sugar for the topping. Ensure the custard is very chilled before caramelizing the sugar.
