Description

A delightful twist on classic sweet potatoes, combining sweetness with a spicy kick for a show-stopping side dish.


Ingredients

  • 4 medium sweet potatoes, cut into 12 inch chunks
  • Hot honey, for drizzling
  • Olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)
  • Feta cheese, for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Parboil sweet potato chunks in salted water for about 10 minutes until slightly softened.
  3. Drain and let cool slightly, then place them in a cast iron skillet or on a baking sheet.
  4. Drizzle with olive oil, and sprinkle with salt and pepper.
  5. Roast in the oven for 25 minutes or until tender and golden.
  6. In the last few minutes of roasting, drizzle hot honey over the sweet potatoes.
  7. Remove from the oven and garnish with fresh parsley or crumbled feta if desired before serving.

Notes

Use firm, unblemished sweet potatoes for the best flavor. Customize with your favorite spices for added heat.
