Description

A weeknight hero featuring sweet roasted yams cradling spicy-sweet ground beef, finished with a sticky hot honey glaze and bright fresh toppings.


Ingredients

  • 4 medium sweet potatoes
  • 1 lb (450 g) lean ground beef
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 3 tbsp honey
  • 12 tbsp hot sauce (adjust to taste)
  • 1 tbsp soy sauce (or tamari)
  • 1 tsp apple cider vinegar
  • Plain Greek yogurt or sour cream, for topping
  • Chopped scallions, for topping
  • Lime, for squeezing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the sweet potatoes and prick them with a fork.
  3. Roast the sweet potatoes on a rimmed baking sheet for 45–55 minutes until tender.
  4. Brown the ground beef in a skillet over medium-high heat, seasoning with salt, pepper, paprika, and cumin.
  5. Drain excess fat if needed, then stir in the honey, hot sauce, soy sauce, and vinegar; simmer for 2–3 minutes until thickened.
  6. Halve the roasted sweet potatoes lengthwise and scoop some flesh to create a cradle.
  7. Fill the sweet potatoes with the hot honey beef mixture.
  8. Top with yogurt or sour cream, scallions, and a squeeze of lime.
