- 1/4 cup honey
- Zest and juice of 2 limes
- 3 tbsp soy sauce (or tamari)
- 2 tbsp olive oil
- 3 cloves minced garlic
- 1 tsp chili flakes
- 1/2 tsp kosher salt
- 1.5 lb boneless chicken thighs or breasts
- 1 tbsp oil for searing
- Steamed rice for serving
- Avocado for serving
- Cilantro for serving
- Quick-pickled red onions for serving
Instructions
- Whisk together honey, lime zest, lime juice, soy sauce, olive oil, garlic, chili flakes, and kosher salt to create the marinade.
- Add the chicken to the marinade and let it sit for at least 30 minutes or up to 8 hours.
- Heat a heavy skillet over medium-high heat and add oil.
- Sear the chicken for 5–7 minutes per side for thighs (6–8 for breasts) until internal temperature reaches 165°F (74°C).
- Remove the chicken, add the reserved marinade to the pan, and simmer for 3–4 minutes to thicken into a glaze.
- Slice the chicken and toss it briefly in the glaze.
- Serve over steamed rice with avocado, cilantro, and quick-pickled red onion.
Notes
Use thighs for a juicier texture, and always check the internal temperature for perfect doneness.
