Description

A bright and balanced honey-lime glazed chicken served over rice with fresh vegetables, perfect for weeknight dinners.


Ingredients

  • 1/4 cup honey
  • Zest and juice of 2 limes
  • 3 tbsp soy sauce (or tamari)
  • 2 tbsp olive oil
  • 3 cloves minced garlic
  • 1 tsp chili flakes
  • 1/2 tsp kosher salt
  • 1.5 lb boneless chicken thighs or breasts
  • 1 tbsp oil for searing
  • Steamed rice for serving
  • Avocado for serving
  • Cilantro for serving
  • Quick-pickled red onions for serving

Instructions

  1. Whisk together honey, lime zest, lime juice, soy sauce, olive oil, garlic, chili flakes, and kosher salt to create the marinade.
  2. Add the chicken to the marinade and let it sit for at least 30 minutes or up to 8 hours.
  3. Heat a heavy skillet over medium-high heat and add oil.
  4. Sear the chicken for 5–7 minutes per side for thighs (6–8 for breasts) until internal temperature reaches 165°F (74°C).
  5. Remove the chicken, add the reserved marinade to the pan, and simmer for 3–4 minutes to thicken into a glaze.
  6. Slice the chicken and toss it briefly in the glaze.
  7. Serve over steamed rice with avocado, cilantro, and quick-pickled red onion.

Notes

Use thighs for a juicier texture, and always check the internal temperature for perfect doneness.
