A moist and naturally sweetened cake made with almond flour, perfect for brunch or as a light dessert.

- 2 cups finely ground almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 1/3 to 1/2 cup honey
- 1/4 cup melted butter or neutral oil
- 2 tbsp lemon juice
- 2 tbsp lemon zest
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch round pan, lining the bottom with parchment.
- In a bowl, whisk together almond flour, baking powder, and salt.
- In a separate bowl, beat the eggs with honey, melted butter or oil, lemon juice, and lemon zest until smooth.
- Fold the wet ingredients into the dry until just combined; do not overmix.
- Pour the batter into the prepared pan and bake for 25–30 minutes, until the top is golden and a toothpick comes out with a few moist crumbs.
- Cool in the pan for 10 minutes, then finish cooling on a rack before slicing.
Notes
Dust with powdered sugar or drizzle with a honey-lemon glaze. Serve with fresh berries and Greek yogurt.
