Ingredients

  • 1 cup yellow cornmeal
  • 1/4 cup sugar
  • 1 tbsp baking powder

  • 1 cup whole milk
  • 2 large eggs
  • 1/3 cup melted butter
  • 1/4 cup unsalted butter (softened)
  • 1/4 cup honey

Instructions

  1. Preheat your oven to 400°F (200°C) and grease an 8-inch square baking pan.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt until combined.
  3. In another bowl, mix the milk, eggs, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; lumps are okay.
  5. Pour the batter into the prepared pan and bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
  6. While baking, mix softened butter with honey in a small bowl until creamy.
  7. Once baked, let cool slightly before slicing and serving with honey butter.
