- 2 tsp salt
- 1 1/2 cups (360 ml) warm water (105–110°F)
- 2 tbsp melted butter
- 8 cups water
- 1/4 cup baking soda
- 1 beaten egg + 1 tbsp water (for egg wash)

Instructions

- Divide the dough into 8 pieces and roll each into a 20–24 inch rope.
- Shape each rope into a pretzel shape.
- In a pot, bring 8 cups of water to a simmer and add baking soda.
- Dip each pretzel in the baking soda bath for 25–30 seconds then lift with a slotted spatula to drain.
- Place on a parchment-lined baking sheet and brush with egg wash and sprinkle with coarse salt.
- Bake at 425°F for 12–15 minutes until deeply golden-brown.
Notes
Use a thermometer to keep water at 105–110°F for best yeast activation. Don’t skip the baking soda bath for the classic chewy exterior.
