- 1 tablespoon Milk

- 3 cups Shredded Sweetened Coconut
- 14 ounces Soft Caramels
- 1 tablespoon Whole Milk
- 8 ounces Dark Chocolate
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the unsalted butter and sugar until light and fluffy.
- Add in the flour, baking powder, and salt, mixing until a dough forms.
- Stir in the milk and vanilla extract until combined.
- Roll the dough into small balls and flatten them slightly.
- Bake the cookies for about 10-12 minutes or until they are lightly golden.
- Let them cool on a wire rack.
- In a small saucepan, melt the soft caramels with 1 tablespoon of whole milk over low heat, stirring until smooth.
- Spread a generous layer of caramel over each cookie and then sprinkle with shredded coconut.
- Melt the dark chocolate in a microwave or over a double boiler.
- Dip the cookie bottoms into the chocolate and place them on parchment paper to set.
Notes
Ensure butter is at room temperature for easy mixing. Let cookies cool completely before adding caramel.
