- 1 cup granulated sugar
- 2 large eggs
- 1 cup milk
- 4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Oil for frying
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- In a bowl, combine the mashed potatoes and sugar.
- Add eggs and milk, mixing until smooth.
- Gradually incorporate the flour, baking powder, and salt until a dough forms that pulls away from the bowl.
- Chill the dough for about 30 minutes.
- Roll out the dough and cut into donut shapes using a donut cutter.
- Heat oil to 350°F (175°C) and fry the donuts until golden brown, about 3-4 minutes per side.
- Let cool on a wire rack, then glaze with a mixture of powdered sugar and milk.
Notes
Allow leftover donuts to cool completely before storing in an airtight container. Can be frozen for longer storage.
