Description

A delightful homemade pomegranate jelly bursting with flavor and antioxidants, perfect for breakfast or as a gift.

Ingredients

Scale
  • 2 cups fresh pomegranate juice
  • 2 cups granulated sugar
  • 1 package powdered pectin
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Juice fresh pomegranates to collect the nectar.
  2. In a large pot, combine pomegranate juice, sugar, and pectin.
  3. Bring the mixture to a rolling boil over medium-high heat.
  4. Cook until it thickens, about 10-15 minutes, stirring frequently.
  5. Perform the cold plate test for doneness.
  6. Pour the jelly into sanitized jars while hot.
  7. Seal the jars and process them in a boiling water bath for 10 minutes.
  8. Let the jars cool, then store them in a cool, dark place.

Notes

To maximize juice extraction, roll the pomegranates before cutting. Use high-quality pectin for best results.
