Ingredients

- 2 cups pearl onions
- 1 cup vinegar (apple cider or white wine)
- 1 cup water
- 1 tablespoon salt
- Spices (mustard seeds, black peppercorns, dill, red pepper flakes, optional)
- Sugar or honey (optional for sweetness)
Instructions
- Blanch the pearl onions in boiling water for 2-3 minutes, then drain and cool.
- In a saucepan, combine vinegar, water, salt, and chosen spices, and bring to a simmer.
- Pour the warm mixture over the onions in a glass jar.
- Let the onions steep as they cool, then refrigerate for a minimum of a few hours, preferably 24 hours for best flavor.
Notes
Pickled onions improve in flavor after a day or two in the refrigerator. Keep them stored in an airtight container and consume within 2 weeks.
