Instructions

  1. Gather all ingredients: all-purpose flour, eggs, salt, and olive oil.
  2. On a clean surface, create a mound with the flour and form a well in the center.
  3. Crack the eggs into the well, adding salt and olive oil. Beat the eggs with a fork while incorporating flour from the edges.
  4. When the mixture starts to come together, use your hands to knead the dough for about 8-10 minutes until smooth and elastic.
  5. Wrap in plastic wrap and let rest for at least 30 minutes at room temperature.
  6. Divide the dough into four equal pieces and cover them with a damp cloth.
  7. Flatten one piece and dust the work surface with flour to prevent sticking.
  8. Roll out the dough to your desired thickness using a rolling pin or pasta machine.
  9. Cut the dough into your preferred pasta shape with a sharp knife or pasta cutter.
  10. Dust cut pasta with flour and set it aside.
  11. Bring a large pot of salted water to a rolling boil. Cook the fresh pasta for 2-4 minutes, depending on thickness.
  12. Taste the pasta to check doneness. Drain and reserve some cooking water.
  13. Combine the pasta with your favorite sauce, tossing gently to coat. Serve immediately.
