  • Total Time: 60 minutes

Scale
  • 2 pounds Fresh Tomatoes (Roma or San Marzano)
  • 2 tablespoons Extra Virgin Olive Oil
  • 4 cloves Garlic, minced

  • 1 handful Fresh Basil leaves, roughly torn
  • 1 teaspoon Salt
  • to taste Black Pepper, freshly ground
  • a pinch Red Pepper Flakes (optional)

Instructions

  1. Wash the fresh tomatoes under cool running water, remove the stems, and cut them into quarters. Set aside.
  2. In a large saucepan, heat the olive oil over medium heat until shimmering.
  3. Add the chopped onion and sauté for 5 to 7 minutes until translucent.
  4. Add the minced garlic and stir for about 1 minute until fragrant.
  5. Pour in the chopped tomatoes and stir to combine.
  6. Season with salt, black pepper, and red pepper flakes if using. Stir to combine.
  7. Reduce heat to low and let the sauce simmer uncovered for about 30 minutes, stirring occasionally.
  8. Stir in the fresh basil leaves and let simmer for an additional 5 minutes.
  9. Taste and adjust seasoning if necessary. Blend for a smoother texture if desired.
  10. Remove from heat and let cool slightly before serving.

Notes

Choose the ripest tomatoes for best flavor. For a thicker sauce, let it simmer longer or blend it for a smoother texture.
