Description

A nostalgic treat that captures the intense, pure maple flavor of syrup in a bite-sized candy, perfect for last-minute gifts and festive occasions.


Ingredients

  • 2 cups pure maple syrup (480 ml)

Instructions

  1. Pour maple syrup into a heavy-bottomed stainless steel saucepan and bring to a rolling boil over medium heat.
  2. Monitor the temperature with a candy thermometer and remove from heat at 235–240°F (112–116°C).
  3. Let the syrup cool to about 110–120°F (43–49°C).
  4. Beat the syrup with a wooden spoon or mixer until it becomes opaque and creamy.
  5. Spoon into candy molds or onto a parchment-lined tray and let set.

Notes

For snow-poured taffy, pour thin streams onto clean snow or crushed ice.
