Warm and comforting Italian Pastina Soup with tender pastina, hearty vegetables, and aromatic herbs, perfect for chilly evenings.

Ingredients

  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups low-sodium chicken or vegetable broth
  • 1 cup pastina
  • Salt and pepper to taste
  • Fresh parsley or basil, chopped (for garnish)
  • Parmesan cheese, grated (for serving)

Instructions

  1. Heat olive oil in a pot over medium heat. Add the onions, carrots, and celery, and sauté until soft and fragrant.
  2. Add the chicken (or vegetable) broth and bring to a simmer.
  3. Stir in the pastina and cook until tender, about 4-5 minutes.
  4. Season with salt and pepper, and serve hot, garnished with fresh herbs and Parmesan cheese.

Notes

For a gluten-free version, use gluten-free pastina. To make it heartier, add shredded chicken or cooked beans.
