- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups low-sodium chicken or vegetable broth
- 1 cup pastina
- Salt and pepper to taste
- Fresh parsley or basil, chopped (for garnish)
- Parmesan cheese, grated (for serving)
Instructions
- Heat olive oil in a pot over medium heat. Add the onions, carrots, and celery, and sauté until soft and fragrant.
- Add the chicken (or vegetable) broth and bring to a simmer.
- Stir in the pastina and cook until tender, about 4-5 minutes.
- Season with salt and pepper, and serve hot, garnished with fresh herbs and Parmesan cheese.
Notes
For a gluten-free version, use gluten-free pastina. To make it heartier, add shredded chicken or cooked beans.
